Honey (English pronunciation: /ˈhʌni/) is a sweet food made by bees using nectar from flowers. The variety produced by honey bees (the genus Apis) is the one most commonly referred to and is the type of honey collected by beekeepers and consumed by humans. Honey produced by other bees and insects has distinctly different properties.

Honey bees form nectar into honey by a process of regurgitation and store it as a food source in wax honeycombs inside the beehive. Beekeeping practices encourage overproduction of honey so that the excess can be taken without endangering the bee colony.

Honey gets its sweetness from the monosaccharides fructose and glucose and has approximately the same relative sweetness as that of granulated sugar. It has attractive chemical properties for baking, and a distinctive flavor which leads some people to prefer it over sugar and other sweeteners. Most micro-organisms do not grow in honey because of its low water activity of 0.6. However, honey sometimes contains dormant endospores of the bacterium Clostridium botulinum, which can be dangerous to infants as the endospores can transform into toxin-producing bacteria in the infant's immature intestinal tract, leading to illness and even death (see Health hazards below).

Honey has a long history of human consumption and is used in various foods and beverages as a sweetener and flavoring. It also has a role in religion and symbolism. Flavors of honey vary based on the nectar source, and various types and grades of honey are available. It is also used in various medicinal traditions to treat ailments. The study of pollens and spores in raw honey (melissopalynology) can determine floral sources of honey. Because bees carry an electrostatic charge, and can attract other particles, the same techniques of melissopalynology can be used in area environmental studies of radioactive particles, dust, or particulate pollution.

what makes honey crystalize? Is it bad to eat once it does?
Q. So if you leave honey on the counter it gets hard. I have often added hot water to get the last bit out and then add it to my tea. But should this not be done. Should honey be refrigerated after it has been opened? Is there a difference between the treatment of raw and cooked honey?

A. Honey never goes bad. Simply microwave it. Honey was found in the Egyptian pyramids from thousands of years ago, and it was still edible.

How long will honey still be good to eat after it has been sealed in an airtight jar?
Q. I bought some honey about 2 years ago from a store and it had been sealed in an airtight jar. It has never been opened until now. I tasted it and it taste very good, but I wasn't going to eat any of it without knowing it wa safe to eat or not. Can you tell me if it will be safe to eat?

A. It is perfectly safe and can last indefinitely. The worst that can happen is that it will form crystals making it not as nice to eat but you can just heat it and they will dissolve.

A. I found two recipes for Honey Lemon Slices. *All you need in honey and a lemon, I prefer one lemon. Cut into slices, put the honey into a small bowl and have a BBQ brush, place the lemon slices onto a plate, make sure to honey both sides of the slice. Put it on a cookie sheet and put crystal sugar on top and bake it for a 1-2 min and then brush honey on top and eat. *As a drink Three items are needed to make this. 3.5 lbs of lemons, one 32 ounce (2 lbs) jar of honey, a medium sized Tupperware container (roughly 7" in diameter and 5" deep). Slice the lemons thinly, about 1/8 inch if possible. Discard the ends of the lemons and as many seeds as you have patience to pick out.
