How do you mark eggs that a hen is sitting on?
Q. I have two banty hens sitting on a pile of eggs together side by side, but there are too many eggs under them to keep warm at once. Every day as more eggs are laid by other hens they scoop those in the pile and sit on those as well. I thought i would mark 6 eggs with stickers and call it good. That way every morning I can go get the fresh eggs and know which ones are fresh. Will the hens take offence to the stickers on the eggs? Are there any better ways to mark them?

A. i had the same problem a while back. the ideal situation would be to prevent the other hens from laying eggs into the nests. however, if you can't do that, u could resort to using a pencil or crayon. just make a clear mark on each egg. the hens will not be bothered by the marks. make sure to check the nests when the hens leave to feed, taking out the freshly laid eggs.

How do I cook over-easy eggs without breaking the yoke?
Q. I usually put the burner on medium, and heat a thin layer of olive oil. I then crack the eggs on the side of the pan, and drop them onto the pan. 50% of the time, the egg yolk breaks instead of staying intact. Does anyone have any suggestions or techniques to increase the chance that the eggs yolk doesn't break? Also, in the above method, I often get little pieces of the shell in the egg. Any ideas how to avoid that too would be greatly appreciated!

A. Preparation: Always use a non-stick finished frying pan,like teflon, silverstone, etc. Be sure to put a bit of cooking oil / margarine into the pan as it's heating up. Step 1: Always break the egg(s) into a bowl or cup before putting them into the frying pan. This way you can remove any pieces of eggshell easily with a spoon. Step 3: Always use a non-stick utensil (that is is very good condition) to make the flip. Final Note: For an over easy egg, the range burner (whether gas or electric) can usually be turned off right after you flip them over. They will finish cooking just from the heat of the pan.

How many eggs eat can you eat without eating the yolk?
Q. I want to increase my protein but I have no idea how much egg (without yolk) can be eaten a week. So how much eggs can I consume with the yolks removed? Anyone also have any idea what to do with the yolks to prevent wastage by throwing them away?

A. What limits your intake of eggs is the yolk due to the cholesterol content. If you're only eating the white, you can as many as you want. As for not wasting the yolks, a friend once told me to cook them and give them to the birds outside. Apparently they love egg yolks and are actually good for them. I find it a bit ironic that birds will eat eggs though, but at least the yolks don't go to waste. Hope this helps and best of luck! For more info on eggs:
