Q. I've got to make scrambled eggs for breakfast at work, and we have about 30 people. About how many dozen eggs should I use?

A. It depends on if you are going to add extra ingredients like ham, cheese, and maybe green peppers. If it's just eggs, then go for 5 or 6 dozen, so there will be plenty. If you are adding things, then 3 or 4 dozen will be enough.

can i add more eggs to the same pickled egg juice once the others are gone?

A. Some of the acid content and salt is absorbed into the first batch of eggs, so the concentration is reduced. If the concentrations fall too low, the pickling process will not retard the decay process. You can 'top up' any salt, but for the vinegar, you might want to add a bit of the 'concentrated pickling vinegar' or 'vinegar essence'. You might want to bring the liquid to the boil (before you top up) if you are concerned about hygiene, but the acid and salt are the long time traditional 'disinfecting agents' anyway, which is WHY they were used from ancient times! Do NOT boil the mixture in an aluminum pan, it will dissolve it and the aluminum can cause health problems! Use Stainless Steel or ceramic. You might want to add a little… [cont.]

A. I hate that..have had the same thing happen, and had to turn it all into egg salad before even, because the eggs looked so bad. Here are some good tips. * You can make the eggs easier to peel by using eggs at least one week old, and by adding plenty of salt to the boiling water. You can also add two or three teaspoons of white vinegar to the water. It is also easier to peel the eggs when they are properly cooled. * It is easier to peel the eggs if you crack it a little at the less pointy end, peel a little and then slide a spoon under the shell. Just move the spoon around under the shell and it will easily remove the rest!
