Century egg, also known as preserved egg, hundred-year egg, thousand-year egg, and thousand-year-old egg, is a Chinese cuisine ingredient made by preserving duck, chicken or quail eggs in a mixture of clay, ash, salt, lime, and rice hull for several weeks to several months, depending on the method of processing. After the process is completed, the yolk becomes a dark green, cream-like substance with a strong odor of sulphur and ammonia, while the white becomes a dark brown, transparent jelly with little flavor or taste. The transforming agent in the century egg is its alkaline material, which gradually raises the pH of the egg from around 9 to 12 or more. This chemical process breaks down some of the complex, flavorless proteins and fats, which produces a variety of smaller flavourful compounds.

Some eggs have patterns near the surface of the egg white that are likened to pine branches.

A. this is a travel question, indirectly it's an ancient chinese way to preserve eggs about 1 month before they go travelling along silk road so that the eggs won't become chickens or become rotten during the journey called century eggs because it looks like centuries old fossil eggs kind of 'masin telor' Procedures: 1. Preparing the pickling solution: Water 1L Sodium chloride(NaCl) 72g Sodium hydroxide(NaOH) 42g Dissolve the NaCl and NaOH completely in water. Bring the solution to a boil and allow it to cool down before use. 2. Submerge the eggs in the saline solution, and store at 15 to 20oC for about 10 days. 3. Pick out the pickled eggs and rinse them. Q. Me and my friends were discussing whether it is possible to eat preserved food over a century old? And do people actually preserve food that old anyways? PS : We already ruled out wine, 100 year old egg...

A. YES, although I myself wouldn't risk it when there's plenty of freshly preserved food at the store. I recently seen on TV(discovery channel I think) a guy opened and ate the contents of a tin can of food (can't remember what exactly) from the late 1800's and he was fine.
